Όσα νομίζεις πως ξέρεις, μα στην ουσία αγνοείς για τη διατροφή!
Στη διατροφή οι περισσότεροι νομίζουμε ότι τα ξέρουμε όλα, μιας και διαρκώς βομβαρδιζόμαστε με πληροφορίες. Μήπως όμως τα έχουμε μπερδέψει;;; Για να αρχίσουμε τα ξεμπερδέματα:
• όλα τα λίπη έχουν τις ίδιες θερμίδες και συγκεκριμένα 9 θερμίδες ανά γραμμάριο. Μπορεί να φτιάξουμε το κέικ μας με ελαιόλαδο αντί για βούτυρο και να τηγανίσουμε αραβοσιτέλαιο που είναι πιο «ελαφρύ», αλλά και στις δύο περιπτώσεις οι θερμίδες θα είναι ακριβώς ίδιες. Δε μιλάμε για το ποιοτικό κομμάτι αλλά μόνο για το ποσοτικό.
• η μαύρη και η άσπρη ζάχαρη, όπως και η φρουκτόζη και οι διάφορες άλλες γλυκαντικές ουσίες μας δίνουν όλες 4 θερμίδες ανά γραμμάριο. Η διαφορά τους είναι το πόσο γλυκές είναι και συνεπώς και η ποσότητα που θα πρέπει να χρησιμοποιήσουμε για να έχουμε το ίδιο γευστικό αποτέλεσμα. Βάζοντας όμως, 3 κουτ. ζάχαρη ή 3 κουτ. φρουκτόζη, το θερμιδικό αποτέλεσμα δεν αλλάζει. Το ίδιο ισχύει και για το μέλι (άκουσον άκουσον) το οποίο βέβαια έχει και σαφώς καλύτερη θρεπτική αξία.
• το μαύρο ψωμί έχει λίγο περισσότερες θερμίδες από το λευκό. Η υπεροχή του ωστόσο, εντοπίζεται στις φυτικές ίνες. Χάρη σε αυτές χορταίνει περισσότερο, βοηθάει στη λειτουργία του εντέρου, έχει χαμηλότερο γλυκαιμικό δείκτη και ταυτόχρονα έχει και περισσότερες βιταμίνες.
• οι ελιές όπως και το λάδι έχουν αρκετές θερμίδες. Μπορεί να έχουμε εμπεδώσει αρκετά το γεγονός πως το πολύ λάδι «παχαίνει», αλλά με τις ελιές ίσως είμαστε πιο άνετοι. 5 μικρές ελιές ή 3 μεγάλες = 1 κουτ. του γλυκού ελαιόλαδο = 45 θερμίδες.
• Η φακή και το σπανάκι δεν είναι και τόσο καλές πηγές σιδήρου. Τα δύο αυτά τρόφιμα περιέχουν όντως ποσότητα σιδήρου. Αυτό που όμως καθιστά τις τροφές αυτές λίγο «παρεξηγημένες» είναι η λεγόμενη βιοδιαθεσιμότητα του σιδήρου αυτού. Δηλαδή το κατά πόσο ο σίδηρος αυτός απορροφάται από τον οργανισμό μας. Αυτό λοιπόν που ισχύει είναι ότι ο σίδηρος που προέρχεται από φυτικές πηγές, δεν απορροφάται όσο αυτός που βρίσκεται σε ζωικές τροφές π.χ. συκώτι και μοσχαρίσιο κρέας. Βέβαια αυτή η διαπίστωση δεν μειώνει καθόλου την κατά τα άλλα μεγάλη διατροφική αξία του σπανακιού που περιέχει βιταμίνες Α και C, φυλλικό οξύ και καροτένια, που είναι αντιοξειδωτικά και της φακής η οποία επίσης δίνει φυλλικό οξύ, σίδηρο, ασβέστιο και διαλυτές φυτικές ίνες.
• Το κοτόπουλο δεν είναι απαραιτήτως ελαφρύ και άπαχο κρέας, παρ’όλο που για πολλούς από εμάς το κρέας του κοτόπουλου είναι συνώνυμο με δίαιτα. Δυστυχώς όμως, και σε αυτή την περίπτωση έχουμε να κάνουμε με μια παρεξήγηση. Το στήθος του κοτόπουλου είναι όντως μια ωφέλιμη τροφή που είναι χαμηλή σε λίπος και ταυτόχρονα πηγή πολύτιμης πρωτεΐνης, υψηλής βιολογικής αξίας. Το μπούτι όμως δεν έχει τα ίδια χαρακτηριστικά, αφού είναι περισσότερο σκούρο κρέας, με ίδια περιεκτικότητα σε πρωτεΐνη, αλλά μεγαλύτερη ποσότητα τόσο λίπους όσο και χοληστερίνης.
• Το χοιρινό κρέας δεν είναι απαραιτήτως πολύ λιπαρό κρέας. Όταν αναφερόμαστε στο χοιρινό κρέας, έχουμε συνήθως στο μυαλό μας ένα πολύ λιπαρό κομμάτι κρέας, γεμάτο ορατό πάχος και χοληστερίνη. Τελικά το κρέας αυτό δεν είναι αυτό που νομίζουμε αφού είναι ένα κρέας που έχει το περισσότερο λίπος περιφερειακά (ορατό), που εύκολα αφαιρείται και τέλος υπάρχουν και κάποια κομμάτια όπως το ψαρονέφρι το οποίο έχει περίπου 6 % λίπος δηλαδή ίσως λιγότερο από το μπούτι του κοτόπουλου!
Συμπέρασμα: πάντα αναρωτιόμαστε, διαβάζουμε και ενημερωνόμαστε και δε θεωρούμε τίποτα γνωστό και δεδομένο!

11 τροφές που μπορούν να μας κόψουν την όρεξη.
«Δίαιτα από Δευτέρα» λένε οι περισσότεροι… αφού δεν μπορούν να ελέγξουν το αίσθημα της πείνας και βρίσκουν τη λύση στο fast food! Ωστόσο, υπάρχουν τροφές που μπορούν να κόψουν μαχαίρι την όρεξη, κλείνοντας την πόρτα στις περιττές θερμίδες και το «τσιμπολόγημα». Οι παρακάτω γευστικές προτάσεις, όχι μόνο μας χορταίνουν, κρατώντας γεμάτο το στομάχι, αλλά παράλληλα μας κρατούν για τουλάχιστον τέσσερις ώρες μετά την κατανάλωσή τους…
Βραστά αυγά
Τα θρεπτικά στοιχεία και οι πρωτεΐνες των βραστών αυγών είναι ικανές να κατευνάσουν την πείνα και να βελτιώσουν τη δίαιτά σας. Καλό είναι να τρώτε περισσότερο το ασπράδι των αυγών, δεδομένου ότι έχει μόνο 16 θερμίδες και καθόλου χοληστερόλη. Αντίθετα, οι κρόκοι αυγών περιέχουν υψηλές ποσότητες κορεσμένων λιπαρών και χοληστερόλης, με αποτέλεσμα να πρέπει να τους καταναλώνετε με μέτρο.
Πλιγούρι βρώμης
Ένα κέντρο Ιατρικής στον Καναδά απέδειξε ότι όσοι τρώνε αδιάλυτες φυτικές ίνες, όπως είναι το πλιγούρι βρώμης, καταφέρνουν να περιορίσουν την όρεξή τους και να χάσουν κιλά. «Αυτό συμβαίνει, γιατί επιβραδύνεται η διαδικασία της πέψης και έτσι αισθάνεστε πλήρεις για περισσότερο διάστημα», εξηγεί η Susan Kraus, κλινική διαιτολόγος στο Ιατρικό Πανεπιστήμιο Hackensack του New Jersey. Προσθέστε λίγη βρώμη μέσα σε ένα μπολ και συνδυάστε τη με φράουλες ή βατόμουρο… για ένα άκρως υγιεινό πρωινό.
Μέντα
Πάρτε λίγη φρέσκια μέντα… και μυρίστε την! Όπως ισχυρίζεται ο δρ. Alan Hirsch, διευθυντής του Smell & Taste Therapy στο Σικάγο, η γλυκιά μυρωδιά της μέντας απενεργοποιεί την όρεξη, καθώς «χτυπά» πάνω στους υποδοχείς των νεύρων μέσα στη μύτη. Οι ορμόνες που απελευθερώνονται ειδοποιούν τον εγκέφαλο ότι το «στομάχι γέμισε», ακόμα και εάν δεν ισχύει κάτι τέτοιο! Εναλλακτικά, πιείτε τσάι μέντας, αγοράστε κεριά με άρωμα μέντας και μασήστε μια τσίχλα με τέτοια γεύση…
Αμύγδαλα
Πιείτε δυο ποτήρια νερό και καταναλώστε μια χούφτα ξηρών καρπών π.χ. 6 καρύδια, 12 αμύγδαλα ή 20 φιστίκια. Μέσα σε 20 λεπτά, θα νιώσετε ότι έχει «σβηστεί» η πείνα σας και ότι έχει περιοριστεί η όρεξή σας. Τα αμύγδαλα περιέχουν το αμινοξύ φαινυλαλανίνη που σηματοδοτεί στην απελευθέρωση της CCK, ορμόνης υπεύθυνης για την επιβράδυνση της πέψης. Πρόκειται για ένα σνακ που διαθέτει μόνο 10 γρ. λίπους και μειώνει την όρεξη σε λιγότερο από μισή ώρα.
Popcorn
Τα ανάλατα και χωρίς βούτυρο popcorn είναι ικανά να γεμίσουν το στομάχι σας, ενώ παράλληλα διαθέτουν ελάχιστες θερμίδες. Μην έχετε στο μυαλό σας ότι τα popcorn είναι παχυντικά, καθώς ο τρόπος που θα τα μαγειρέψετε παίζει καθοριστικό ρόλο. Πιο συγκεκριμένα, με δυο – τρεις χούφτες popcorn μπορείτε να ξεγελάσετε με τον καλύτερο τρόπο την πείνα σας.
Πιπεριές τσίλι
Οι καυτερές πιπεριές στις ομελέτες και τις σαλάτες περιορίζουν σημαντικά την όρεξή σας, καθώς περιέχουν καψαϊκίνη, μια φυσική χημική ουσία που οδηγεί προς την απώλεια βάρους και αυξάνει τους ρυθμούς του μεταβολισμού. Τηγανητές, ψητές ή στο φούρνο… οι πιπεριές τσίλι θεωρούνται η κατάλληλη επιλογή κατά τη διάρκεια της δίαιτας!
Αβοκάντο
Μισό αβοκάντο σαν συνοδευτικό του μεσημεριανού σας αρκεί για να περιορίσετε το τσιμπολόγημα μέσα στην ημέρα. Πιο συγκεκριμένα, ερευνητές του πανεπιστημίου “Loma Linda” στην Καλιφόρνια απέδειξαν ότι το αβοκάντο, που είναι πλούσιο σε λιπαρά, επηρεάζει τον κορεσμό της πείνας, τα επίπεδα σακχάρου στο αίμα και την παραγωγή ινσουλίνης. Σε πείραμα με 26 άτομα, όσοι έτρωγαν λίγο αβοκάντο μαζί με το γεύμα τους μείωναν την όρεξή τους κατά 40% για τις επόμενες τρεις ώρες και κατά 28% για τις επόμενες πέντε ώρες. Άλλωστε, μισό αβοκάντο περιέχει μόνο 160 θερμίδες και είναι πλούσιο σε φυτικές ίνες, κάλιο και βιταμίνες C, K και Β6.
Γάλα σόγιας
Οι πρωτεΐνες και οι φυτικές ίνες που υπάρχουν στο γάλα σόγιας, το καθιστούν μια από τις top λύσεις για να κρατήσετε «χορτάτο» το στομάχι σας. Μελέτη που δημοσιεύτηκε στο “American Journal of Clinical Nutrition” διαπίστωσε ότι η δίαιτα με πολλές πρωτεΐνες καταπολεμά το αίσθημα της πείνας και οδηγεί στην κατανάλωση περίπου 441 λιγότερων θερμίδων σε σχέση με όσους επιλέγουν άλλα είδη δίαιτας. Άλλωστε, σύμφωνα με το Πανεπιστήμιο Davis της Καλιφόρνια οι φυτικές ίνες απελευθερώνουν την χολοκυστοκινίνη (CCK) από το λεπτό έντερο, μια ορμόνη που μεταφέρει στον εγκέφαλο το μήνυμα πληρότητας.
Σούπα
Η κοτόσουπα, η ψαρόσουπα και γενικά κάθε υγρή σούπα είναι ικανή να ισορροπήσει τις ορμόνες της όρεξης και να περιορίσει τους πόθους σας, χάρη στην υψηλή περιεκτικότητα σε νερό και σύνθετους υδατάνθρακες. Η σούπα γεμίζει το στομάχι και παράλληλα, η κατανάλωσή της με κουτάλι οδηγεί στο να τρώτε πιο αργά και να αφήνετε χρόνο (30 λεπτά) στις χημικές ενώσεις κορεσμού, ώστε να κατακλύσουν το σώμα σας. Συμπληρωματικά, ρίξτε στη σούπα μερικά πικάντικα μπαχαρικά, καθώς η επιστήμη έχει αποδείξει ότι π.,χ. το πιπέρι καγιέν οδηγεί τους ανθρώπους να τρώνε 60 θερμίδες λιγότερες και να καίνε 10 περισσότερες από τους υπόλοιπους.
Μήλο και μπανάνα
Τα μήλα είναι γεμάτα με αδιάλυτες φυτικές ίνες που έχουν αποδειχθεί ότι καταστέλλουν την πείνα και «γεμίζουν» ιδανικά το στομάχι. Παράλληλα, τα ζουμερά κόκκινα φρούτα περιέχουν φυσικά σάκχαρα που σταθεροποιούν τα επίπεδα σακχάρου του αίματος, με αποτέλεσμα να σας απομακρύνουν από την αδυναμία και την υπερφαγία. Γι’ αυτό φάτε μήλα άφοβα μέσα στο 24ωρο!
Γαλοπούλα
Το κυρίαρχο συστατικό της γαλοπούλας είναι η τρυπτοφάνη, ένα αμινοξύ που εισέρχεται στον εγκέφαλο και στη συνέχεια μετατρέπεται σε σεροτονίνη. Η τελευταία προκαλεί το αίσθημα του κορεσμού και δεν σας αναγκάζει να ανοίγετε το ψυγείο κάθε είκοσι λεπτά.

Η υγεία σου θα πρέπει να γίνει η πρώτη και βασική σου προτεραιότητα και θα χρειαστεί να αγωνιστείς, καθημερινά, για να την κατακτήσεις. Χρειάζεσαι γνώση, πειθαρχία και πάνω από όλα θέληση.
Σε αυτό το άρθρο θέλω να σου παρουσιάσω μερικές βασικές αρχές διατροφής των οποίων η αυστηρή καθημερινή εφαρμογή θα σε βοηθήσει να ξεφύγεις από τη σύγχυση και την άγνοια.Θα σου δώσει δύναμη και θάρρος να ξαναβρείς την υγεία σου (εάν είσαι ασθενής) και, κυρίως, θα σου προσφέρει τα απαραίτητα εφόδια της γνώσης για να κάνεις πρόληψη.
Βασικοί διατροφικοί κανόνες
1) Πίνε καθημερινά αρκετή ποσότητα υγρών
2) Πίνε μόνο, όταν διψάς
3) Τρώγε μόνο, όταν πεινάς
4) Σταμάτα το φαγητό πριν να χορτάσεις εντελώς
5) Η διατροφή σου να αποτελείται κατά 80% από αλκαλικές τροφές και 20% από όξινες τροφές
6) Η διατροφή σου να αποτελείται 80% από ωμά – ανεπεξέργαστα τρόφιμα και μόνο 20% από μαγειρεμένα (στον ατμό) τροφές
7) Η διατροφή σου να αποτελείται 80% από φυτικά προϊόντα και 20% ζωικά προϊόντα (όχι σάρκες)
8) Μην ανακατεύεις άμυλα και πρωτεΐνες στο ίδιο γεύμα
9) Μην πίνεις υγρά κατά τη διάρκεια του γεύματος
10) Μην τρως ενδιάμεσα των γευμάτων (κολατσιό, σνακ, τσιμπολογήματα)
11) Παράλειψε, εντελώς, το πρωινό γεύμα
12) Να λαμβάνεις μόνο 2 συμπυκνωμένα γεύματα ημερησίως και με χρονική απόσταση 5 – 6 ώρες μεταξύ τους
13) Μέχρι τις 12:00μ.μ. να λαμβάνεις μόνο νερό, αφεψήματα, χυμούς και φρούτα

16) Εάν είσαι θυμωμένος, εκνευρισμένος, κουρασμένος, ασθενής, στρεσαρισμένος ΜΗΝ τρως
17) Εάν δε διαθέτεις τον απαραίτητο χρόνο και την ψυχική γαλήνη, για να απολαύσεις το γεύμα σου, ΜΗΝ τρως

19) Μάσα αργά και σχολαστικά την κάθε μπουκιά σου. Τουλάχιστον 30 – 50 φορές
20) Μη συζητάς, λογομαχείς, διαβάζεις ή βλέπεις τηλεόραση την ώρα του φαγητού
21) Τρώγε τα φρούτα ΠΑΝΤΑ μόνα τους και με το σύστημα της μονοφαγίας, ως ανεξάρτητο και πλήρες γεύμα (ΠΡΩΙΝΟ)
22) Προτίμησε προϊόντα βιολογικής καλλιέργειας
23) Προτίμησε προϊόντα φρέσκα, του τόπου σου και πάντα της εποχής
24) Σταμάτα, αμέσως, όλα τα δηλητήρια, όπως καφέ, αλκοόλ, τσιγάρο
25) Περιόρισε σταδιακά και κατόπιν ΠΕΤΑΞΕ όλα τα φάρμακα
26) Νήστευε περιοδικά μόνο με νερό (2 φορές το χρόνο από 5 – 7 ημέρες)
27) Καθιέρωσε μια ημέρα την εβδομάδα (24 – 36 ώρες) μόνο με χυμούς ή φρούτα ή ακόμη καλύτερα μόνο με νερό
28) Κάνε αρκετές φρουτοθεραπείες (σταφυλοθεραπεία ή πορτοκαλοθεραπεία) για 5 – 20 ημέρες συνεχόμενα, κυρίως άνοιξη και φθινόπωρο
29) Κάνε χυμοθεραπείες για 7 – 30 ημέρες (με χυμούς λαχανικών)
30) Χρησιμοποίησε συμπληρώματα 3ης γενιάς (χλωρέλλα, γύρη, σπιρουλίνα), όπου και εάν χρειάζεσαι και πάντα με καθοδήγηση
31) Αγάπησε το σώμα σου και φρόντισε το ανάλογα (άσκηση, αεροθεραπεία, ηλιοθεραπεία)
32) Συνέχιζε να παρακολουθείς και να διαβάζεις το προσωπικό μου site, για να εμπνέεσαι και να μαθαίνεις τα όσα επιμελώς σου αποκρύπτονται.
Τα όσα αναφέρονται δεν ισχύουν απαραίτητα για επαγγελματίες αθλητές, έγκυες, θηλάζουσες γυναίκες, υπερήλικες με ανίατες ασθένειες, βρέφη και παιδιά.

Μύθοι και αλήθειες για τη διατροφή μας.
Τα αυγά βλάπτουν την καρδιά μας; Παχαίνουν οι υδατάνθρακες; Αν παραλείπω γεύματα, μπορώ να χάσω βάρος; Τέτοια ερωτήματα έχουν απαντηθεί κατά καιρούς και έχουν προκαλέσει ανησυχία, αγωνία και άφθονη λογομαχία ανάμεσα σε κοινό και ειδικούς. Τελικά τι ισχύει; Ας δούμε μαζί πώς καταρρίπτονται κάποιοι από τους πλέον δημοφιλείς μύθους.
Μύθος 1: Μύθος: “Τα αυγά κάνουν κακό στην καρδιά σας.”
Τα αυγά περιέχουν ένα σημαντικό ποσό της χοληστερόλης στον κρόκο, γύρω στα 211mg ανά μεγάλο αυγό. Και ναι, η χοληστερόλη είναι η ουσία στο αίμα μας που συμβάλλει στην απόφραξη των αρτηριών και σε καρδιακές προσβολές. Ωστόσο, η επισήμανση των αυγών ως «ανθυγιεινής συνήθειας για την καρδιά» συνδέεται με λάθος μήνυμα λένε οι ειδικοί. «Επιδημιολογικές μελέτες δείχνουν ότι οι περισσότεροι υγιείς άνθρωποι μπορούν να τρώνε ένα αυγό την ημέρα χωρίς προβλήματα», λέει ο Dr Penny-Etherton, διακεκριμένος καθηγητής της διατροφής στο πανεπιστήμιο Penn State.
Πως; Για τους περισσότερους από εμάς η χοληστερόλη που τρώμε, στα αυγά ή οποιοδήποτε άλλο τρόφιμο δεν έχουν τεράστιο αντίκτυπο στην αύξηση της χοληστερόλης στο αίμα μας. Το σώμα αντιστέκεται απλώς με το να κατασκευάζει από μόνο του λιγότερη χοληστερόλη. Οι κύριοι ένοχοι καρδιοπάθειας είναι τα «κορεσμένα και trans λιπαρά, τα οποία έχουν πολύ μεγαλύτερο αντίκτυπο στην αύξηση της χοληστερόλης του αίματος», σημειώνει ο Kris-Etherton. Αντίθετα, το αυγό περιέχει μόνο 2 γραμμάρια κορεσμένου λίπους και καθόλου trans λιπαρά οξέα.
Αλλά προτού φτιάξετε μια ομελέτα 3 αυγών, να έχετε στο νου σας τις συστάσεις διατροφής και τρόπου ζωής από τον διεθνούς φήμη οργανισμό American Heart Association που ο Kris-Etherton επισήμανε: Περιορίστε την καθημερινή πρόσληψη χοληστερόλης σε λιγότερο από 300mg την ημέρα, λιγότερο από 200mg εάν έχετε ιστορικό καρδιακών προβλημάτων ή διαβήτη ή είστε άνω των 55 ετών (γυναίκες) ή 45 (άνδρες). «Αν κάνετε τα μαθηματικά, υπολογίζοντας την κατανάλωση έως ένα αυγό την ημέρα από, τότε είστε στα φυσιολογικά πλαίσια» σημειώνει. “Τα αυγά μπορούν να μπουν στη διατροφή σας, εφ ‘όσον μπορείτε να δημιουργήσετε χώρο για αυτά στην υπόλοιπη μέρα που τρώτε.
Μύθος 2: Οι υδατάνθρακες σας κάνουν παχύσαρκους
Σε αντίθεση με τις θεωρίες της δίαιτας χαμηλής σε υδατάνθρακες του Δρ Atkins, που δημοσιεύτηκε για πρώτη φορά το 1972 (και τα παρόμοια βιβλία που ακολούθησαν), δεν υπάρχει τίποτα εγγενώς παχυντικό στους υδατάνθρακες, λέει ο Jean Harvey-Berino, PhD., RD, πρόεδρος του τμήματος της διατροφής και των επιστημών τροφίμων στο Πανεπιστήμιο του Βερμόντ και συν-συγγραφέας της ‘’The EatingWell’’ διατροφής (Countryman, 2007). “Αυτό που σας κάνει να παχαίνετε είναι το να τρώτε πολλές θερμίδες.”
Δεν υπάρχει καμία αμφιβολία ότι η αυξημένη κατανάλωση τροφίμων πλούσιων σε ζάχαρη, όπως τα λευκά αρτοσκευάσματα και τα γλυκά, μπορεί να αυξήσει τον κίνδυνο εμφάνισης προβλημάτων υγείας, όπως καρδιοπάθειες και διαβήτη. Τι γίνεται με τους ισχυρισμούς ορισμένων ωμοφάγων, πως τα σώματά μας έχουν μια περιορισμένη παροχή ενζύμων και ότι με την κατανάλωση περισσότερων ωμών τροφών με άθικτα ένζυμα, θα είμαστε σε θέση να διαθέσουμε το σώμα μας στη χρήση του εφοδιασμού τους; Η πραγματικότητα είναι ότι δεν έχουμε έναν πεπερασμένο αριθμό ενζύμων και παράγουμε ένζυμα όσο ζούμε.
Μύθος 4: Οι θερμίδες που προσλαμβάνονται το βράδυ είναι πιο παχυντικές από εκείνες που τρώγονται νωρίς το πρωί
Οι θερμίδες είναι θερμίδες και δεν έχει σημασία τι ώρα θα τις τρώτε. Αυτό που έχει σημασία είναι το σύνολο των θερμίδων που λαμβάνετε.
Μύθος 5: Τα light τρόφιμα δεν έχουν θερμίδες
